This project saw the complete transformation of a tired interior within a heritage building into a vibrant new wine bar and restaurant, set to open in early 2026.
HiVis Built was engaged to undertake a full internal strip-out and rebuild, reimagining the space from floor to ceiling while respecting the character of the existing structure. The vision was clear — create a warm, inviting venue with a strong identity and seamless functionality for both guests and staff.
Full Commercial Fit-Out
The scope of works included a comprehensive commercial fit-out, featuring:
- Complete demolition of the existing interior
- New floor-to-ceiling finishes throughout
- Installation of a fully stainless-steel commercial kitchen
- Custom-built bar and service areas
- Upgraded services to meet hospitality compliance requirements
Every element was constructed to meet strict commercial standards, ensuring durability, safety and long-term performance in a high-use hospitality environment.
Warm, Rustic Aesthetic
The interior design leans into a warm, rustic palette, achieved through carefully selected wall cladding, textured finishes and robust materials suited to heavy patron traffic. While rich in character, the layout prioritises clear sightlines and free-flowing thoroughfares, creating a venue that feels intuitive and easy to navigate.
The result is a space that balances atmosphere with practicality — welcoming and relaxed for guests, yet efficient behind the scenes for staff.
A Highly Collaborative Process
From day one, this project brought together a diverse and passionate team — property owners, architects, project managers, interior designers, and a group of Hobart-based chefs and bartenders. With multiple perspectives, creative ideas and budget considerations at play, collaboration was key.
HiVis Built worked closely with all stakeholders throughout the process to refine concepts, manage costs and maintain momentum. Open communication and coordinated planning ensured the project remained aligned with the overall vision — without exceeding budget constraints.
Delivered on Time
Construction was completed just prior to Christmas, with occupancy achieved across December 2025 and early January. Careful programming and disciplined project management were critical in delivering the venue ready for its anticipated early 2026 opening.
